Remove the skin from the chicken breasts and cut them into bite-sized pieces. Place all ingredients in a large bowl and mix well. Place the chicken on a plate or baking sheet and cover with plastic wrap. Refrigerate for 1 hour. Remove the chicken from the marinade, reserving the marinade, and place it on a wire rack over a baking sheet. Bake at 400 degrees for 30 minutes or until cooked through. Serve with your favorite side dish.

Southern Style Chicken
Baked Ziti:
1 (16 ounce) package of ziti pasta (we used Rigatoni)
1/4 cup of olive oil (we used extra virgin olive oil)
2 large cloves of garlic, minced (about 2 teaspoons)
1/2 teaspoon of dried basil (we used McCormick’s dried basil)
1/4 teaspoon of dried oregano (we used McCormick’s dried oregano)
1 to 1-1/2 cups of your favorite marinara sauce, divided in half (we used Rao’s Marinara Sauce and Hunts’ Tomato Basil Sauce)
1 pound of ground beef (we used 85/15 lean ground beef)
1/2 cup of freshly grated Parmesan cheese, divided in half (we used Kraft Light Italian Cheese Blend)
1 pound of pasta (we used Rigatoni)
Preheat the oven to 350 degrees. Cook the pasta according to the directions on the package, drain and rinse with cold water. In a large bowl, combine the olive oil, garlic, basil and oregano and mix well. Add 1 cup of marinara sauce and stir until combined.
Add half of the Parmesan cheese and half of the ground beef, stirring until combined. Transfer to a greased 8×8 baking dish and cover with the remaining 1 cup of marinara sauce. Cover and bake for 45 to 50 minutes or until heated through.
While the pasta is cooking, cook the ground beef in a large skillet over medium heat until browned. Drain the excess fat and transfer to a large bowl. Add the remaining 1/4 cup of Parmesan cheese, stirring until combined.
Set aside. When the pasta is done cooking, add it to the bowl with ground beef and mix well using a wooden spoon or potato masher. Transfer to a greased 9×13 baking dish and top with remaining marinara sauce. Place under broiler until bubbling on top, about 5 minutes or just until golden brown on top. Serve with your favorite side dish.

Chicken and Sausage Gumbo
1 pound of chicken thighs (we used boneless skinless chicken thighs)
1 pound of sausage links
6 cups of water, divided in half (we used 3 cups of unsalted chicken broth and 3 cups of water)
2 medium-sized yellow onions, sliced into rings 1/4-inch thick (we used one onion)
3 stalks celery, chopped fine (about 2 tablespoons)
2 bell peppers, chopped fine (about 3/4 cup)
2 tablespoons of olive oil, divided in half (we used extra virgin olive oil)
2 tablespoons of fresh thyme
2 teaspoons of Cajun seasoning (we used McCormick’s Cajun Seasoning)
1 teaspoon of dried oregano (we used McCormick’s dried oregano)
4 cloves of garlic, minced (about 2 teaspoons)
1/4 cup of vegetable stock (we used unsalted chicken broth)
1 pound and 1/2 of shrimp, peeled and deveined (we used frozen shrimp, thawed and drained)
3 stalks of celery, chopped fine (about 2 tablespoons)
1 cup of green onions, chopped fine (about 3 medium-sized green onions)
Air-Fryer Garlic Rosemary Brussels Sprouts

Ingredients:
Brussels Sprouts – 1 lb (500 grams)
Garlic – 3 cloves
Rosemary – 3 sprigs, leaves and stems only. (Minced)
Oil – 2 tbsp. (You can use olive oil or vegetable oil.)
Method:
Wash the sprouts thoroughly in running water to remove any dirt and grit. Trim off the ends and cut the sprouts into halves or quarters. Set aside.
Peel and mince the garlic cloves. Chop the stems of rosemary leaves as well. Set aside for later use (I will be using them for a soup).
In a small saucepan, heat oil over medium heat until hot but not smoking (about 2 minutes). Add minced garlic and cook until aromatic, but do not brown it or burn it. Remove from heat immediately when done. Pour into a bowl to stop cooking it further or cool it down if necessary. Once cooled, add chopped stems of rosemary leaves and set aside.
Add the sprouts to the oil and fry until crisp-tender, about 3 minutes. Remove from heat and drain on paper towels. Sprinkle with chopped rosemary leaves and serve immediately, with lemon wedges for squeezing over it.

The Air Fryer is a great tool to have in your kitchen. It is a simple appliance that can save you time as well as money. I use mine almost every day and I love it. The Air Fryer is an easy way to cook food without the excess oil and grease from frying. The air fryer makes it possible for you to have fully cooked fish that is tender, yet still light and flaky, with no oil or grease on the outside of the fish fillets! You can also freeze fish for future use which makes meal planning much easier.
Air frying also creates crispy browned edges on food that are not possible when using other cooking methods such as baking, grilling and broiling.
When cooking fish in the air fryer, I like to use a light coating of olive oil on the fish and then sprinkle it with seasonings such as salt and pepper. The fish will cook quickly and then be left to sit in its juices for a few minutes before serving so that the juices can soak back into the fish. This helps to keep your Air Fryer Fish moist while still giving it a crispy outside. It also gives you an opportunity to add a little extra flavor if you want.
When preparing this recipe, I like to use cod since it is mild tasting and easy to fry or bake. Cod is a great source of protein for those looking for their daily dose of protein! If you have never cooked with cod before, it can be a bit of a challenge to figure out how to cook it. It is also important to know that cod is not very fatty and can be dry if overcooked. I like to keep my fish in the air fryer for about 7 minutes and then take it out and let it sit for about 5 minutes before serving.
If you do not have an Air Fryer, you can use your oven or stovetop fryer at low heat with oil or butter to give the fish an extra crispy outer coating. I also like to add a little lemon juice, just a squeeze, to the oil while frying the fish. The lemon juice helps create caramelization on the outside of the fish which gives it that nice browned crispy texture.
To make this meal more interesting, I like to serve the fish with a side of steamed broccoli and mashed potatoes. This gives you a great balance of healthy foods that are rich in vitamins and nutrients. The Air Fryer Fish and Fries is a great meal to have in your arsenal for those busy weeknights when you need something fast to make but still nutritious.

Air-Fryer Mini Nutella Doughnut Holes:

Ingredients:
Mini Nutella Doughnut Holes: (makes 6)
1 cup self-raising flour, sifted
2 tablespoons of caster sugar
1/2 teaspoon of baking powder
1/4 teaspoon of salt – optional pinch to flavour the doughnuts. You will have to taste as you go along and add more as you see fit. I used 1/4 tsp in this recipe.
If you don’t want to use any, then just leave it out! You can use fresh or dried herbs instead of the salt if you like. I used dried lavender for this recipe. In fact, I would use fresh lavender in place of the salt if you wish. It’s a little bit more intense but it’s lovely.
5 tablespoons of butter, melted and cooled (I used salted butter as I like my doughnuts salty)
1/2 cup of milk, at room temperature. I used half-and-half. You can use whole milk or skimmed milk if you wish. I just happened to have some half-and-half on hand for this recipe!
1/4 cup of Nutella (use your favourite brand – I used the one from the supermarket shelf)
1/2 cup of icing sugar, sifted
Small handful of dried lavender (optional)
Method:
Preheat your oven to 200 degrees Celsius. Grease several baking trays with butter or cooking spray. I used silicone baking mats for this recipe – they were awesome! They were non-stick and easy to clean. You can use parchment paper if you want. If you want to keep the doughnuts healthy, then use silicone baking mats instead of greased trays (butter or cooking spray).
Mix the dry ingredients together in a medium bowl, making sure that there are no lumps in the flour. In a separate bowl, mix the melted butter with the milk until combined. Add the melted butter and milk to the dry ingredients. Mix until just combined. Add the Nutella and mix well. It will be thick and sticky, but don’t worry – we need this! Spoon into a piping bag with a plain nozzle.
Pipe little balls of doughnut mixture onto the baking trays and leave about 1cm between each ball. You can make them in any shape you want or size you want – I just made regular sized balls for this recipe. You can pipe them in shapes if you want, but I don’t recommend it as they are harder to get out of the piping bag afterwards! Bake for 10 minutes or until golden brown on top (they will look like little muffins when they come out of the oven).
You can also do this in a skillet. If you don’t have a piping bag, no worries! Just use a small glass or cup to pipe the doughnuts onto the baking trays. Leave them to cool on a wire rack before you eat them.
Recipe Notes:
I used salted butter for this recipe – if you prefer unsalted butter, then use unsalted butter instead of salted butter. If you are using whole milk or skimmed milk, then I recommend using unsalted butter as well (if you prefer unsalted butter, that is).
The doughnut mixture will be thick and sticky when cooked and will not spread much when baked – but don’t worry! You can easily spread these out with a fork or the back of a spoon after they have cooled. If you want to use dried lavender instead of dried rosemary, then you can substitute dried lavender for the dried rosemary.

Air-Fryer Ground Beef Wellington
Ingredients:
1 pound ground beef (I used 93% lean)
1 egg
2 tablespoons Worcestershire sauce
2 teaspoons garlic powder, divided use (I used a lot of it)
2 teaspoons onion powder, divided use (I used a lot of it)
3/4 teaspoon salt, divided use (I used about 1/4 cup)
3/4 teaspoon black pepper, divided use (I used about 1/2 teaspoon)
1/2 cup bread crumbs (I used panko)
1 tablespoon olive oil, divided use (I used about 1 tablespoon)
1 cup sliced mushrooms (I used mixed baby bella and shiitake)
How to:
Preheat your air fryer to 425°F. Set the air fryer basket into the air fryer. In a large bowl mix together the ground beef, egg, Worcestershire sauce, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, salt and black pepper.
Mix until well combined. Add in bread crumbs and mix until well combined. Place beef mixture into the air fryer basket. Set the temperature to medium heat and cook for about 15 minutes or until it’s fully cooked. While the beef is cooking, add olive oil to a pan over medium heat and add in mushrooms.
Cook until mushrooms start to brown. Add in the cooked beef to a bowl and mix together with any juices that are leftover from cooking. Add in desired amount of salt and pepper to taste, I added about 1/4 teaspoon each of both salt and pepper.
When the air fryer is finished cooking, take out the meat from your air fryer basket and transfer it onto a plate or cutting board. Cover with foil for about 5 minutes before slicing it up into small pieces. Serve with your favorite sides and enjoy!
Tips:
If you don’t have any Worcestershire sauce, I would recommend adding a little bit of soy sauce to the beef mixture.
If you don’t have any garlic powder, I would recommend adding a little bit of onion powder to the beef mixture.
Once again, this recipe is amazing! I’ve shared it with my family and they all love it too. This recipe is great for a special occasion meal since the beef is so flavorful!
*Note: I used 2 tablespoons in the recipe, but you may use more or less depending on how much you like, but I would start with 1 tablespoon and then add more if needed.

Ravioli dough (1/2 cup)
Ravioli sauce (2 tbsp)
Eggs- 2 large (beaten with a fork)
Salt to taste

Instructions:
Take the dough and divide it into two portions. Make a ball out of each portion. Dust it with flour and roll it out to a thickness of about 1/2 inch (1 cm).
Cut it into equal size squares (the size of your ravioli) using any chef’s knife or pizza cutter. You can also use a cookie cutter for this purpose.
Place the squares on a plate and spread some sauce on them. Add salt to taste over the sauce and sprinkle some beaten eggs over the top.
Heat oil in your air fryer at 350 F (180 C). Fry the squares one by one until they are golden brown in color turning them once while they are cooking so that they cook evenly.

This bread pudding was so simple to make and tasted great! I added a little almond extract to the heavy cream, but it wasn’t necessary. The sweetened condensed milk was perfect for this recipe and the bread pudding came out beautifully!
If you want to add some extra flavor, try adding some cinnamon or a few sprinkles of cinnamon. The bread pudding was very creamy and delicious! I served it with a scoop of vanilla ice cream on top, but you could use whatever type of ice cream you prefer.

2 pounds chicken drumsticks (thighs)
1 teaspoon salt, more to taste
1/4 teaspoon ground black pepper, more to taste
2 tablespoons vegetable oil or olive oil, divided in half (for the skin) or 2 tablespoons butter or margarine (for the skin)
or 2 tablespoons coconut oil, divided in half (for the skin) or 2 tablespoons unsalted butter (for the skin) or 2
tablespoons ghee* (for the skin) or 1 tablespoon unsalted butter plus 1 tablespoon ghee* (for the skin) or 1 tablespoon
vegetable oil plus 1 tablespoon unsalted butter* (or coconut oil)* for frying Directions: Preheat air fryer to 375°F.
In a medium bowl, add the chicken skin side down, sprinkle with salt and pepper and rub until evenly coated. In a small bowl, combine the oil (or butter or margarine or coconut oil) with 1/4 cup water for the skin or ghee* for the skin.
Now, flip over the chicken and coat with vegetable oil (or butter or margarine or coconut oil) generously, on all sides; spread it out evenly so that each piece is completely covered.
This is done to ensure even cooking throughout the dish and to prevent sticking of any ingredient to the fryer pan while you are cooking them.
Place in air fryer basket, coating both sides of each drumstick with oil (or butter or margarine or coconut oil).
